How to make the Maui Manwich with Spam

While there were many recipes using Spam that made people wonder what crazy person could have thought of them (chocolate-dipped nut balls?!?), most of the ideas at the 2011 Greater Niagara Frontier Council’s Onondaga District Klondike were actually pretty good.

This one — the Maui Manwich, which uses Spam, barbecue sauce and coleslaw — was judged the best.

THE MAUI MANWICH
makes about 6 sandwiches

Ingredients for Meat:

  • One 12-ounce can Spam Lite or Spam Regular
  • 1/2—3/4 cup BBQ sauce (choose whatever you like!)

Directions:

Slice spam into 1/4-inch-thick slices.

Slice spam again into 1/2-inch slices lengthwise.

Fry spam slices in hotfrying pan until crispy and browned, turning frequently. Drain grease.

Add 1/4—1/2 cup BBQ sauce to frying pan and mix.

Ingredients for topping:

  • 16 ounces of coleslaw mix (about 2 cups, cleaned and cut cabbage and carrot mix sold in produce section)
  • 1/2 cup sugar
  • 1/2 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 1 small canned crushedpineapple with juice (about 1/2 cup)
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. black pepper
  • 1/4 tsp. salt
  • 1/2 cup craisins

Directions:

Mix everything together and chill.

Put hot barbecue pork filling on soft kaiser roll or bun, top with coleslaw mix, and eat!


WINNING SPAM HAIKUS

A Haiku is an ancient form of poetry. It has a simple rhyming scheme of three lines, with five syllables on the first line, seven on the second and five on the third. The Scouts who attended the 2011 Onondaga District Klondike derby had a competition in which they wrote haikus with Spam as the topic.
